How to Brew Dark Roast Coffee Without Bitterness

On a busy morning, good coffee shouldn’t ask too much of you.

Dark roast should taste bold, smooth, and comforting—not harsh or burnt. If your cup comes out too bitter, you probably don’t need a different coffee maker or a complicated routine. A few small adjustments can make a big difference.

Here are three easy ways to brew our Dark Matter whole bean coffee with whatever method fits your morning.

Three things that make better coffee

Let boiling water rest for about 30 seconds. Water that’s too hot can bring out more bitterness in darker-roasted coffee.

Grind your beans right before brewing when you can. It keeps more of the flavor and aroma in your cup.

Treat measurements as a starting point. We’ll give you a reliable recipe, but your taste gets the final say.

Your everyday coffee maker

Your regular coffee maker can make a genuinely good cup.

For about 11 ounces of water, start with 20 grams—or roughly four level tablespoons—of medium-ground coffee.

If your machine has a strength setting, try the regular setting first. Dark Matter already brings plenty of body on its own.

It also helps to clean the basket, carafe, and reusable filter regularly. Old coffee oils can make a fresh pot taste bitter.

If the coffee tastes too strong or dry, use a little less next time. If it tastes thin, add a little more. That’s it.

French press

French press makes a rich, full-bodied cup and works especially well if you like your coffee with milk or oat milk.

Use 30 grams—about six level tablespoons—of coarsely ground coffee with approximately 15 ounces of water.

Pour in the hot water, stir gently, and let it brew for four minutes. Press the plunger down slowly and pour the coffee out right away.

Don’t leave it sitting on the grounds while you get ready for the day. It’ll keep brewing and can become bitter.

Pour over

Pour over gives you more control, but it doesn’t need to become a morning science project.

Start with 20 grams of medium-ground coffee and about 11 ounces of water.

Pour in just enough water to wet all the grounds and wait 30 seconds. Then add the remaining water slowly in small circles. Aim to finish the brew in about three minutes.

If the coffee tastes bitter, use a slightly coarser grind or shorten the brewing time. If it tastes weak, try grinding a little finer.

Change one thing at a time and you’ll quickly find what works for you.

What Dark Matter tastes like

Dark Matter is our Level 9 extra-dark roast, made with coffee from the Chiapas Highlands of Mexico.

Look for dark chocolate, toasted almond, and brown sugar, with a full body and smooth finish. It has enough presence for cream, milk, or oat milk, but it’s balanced enough to enjoy black.

It’s bold coffee without the unnecessary attitude.

Make it yours

You don’t have to brew coffee the “right” way. You only have to make a cup you enjoy.

Start with what you already have. Adjust it to your taste. Some mornings you’ll take your time, and other mornings you’ll pour it into a travel mug and keep moving. Both count.
