Why Mexico? Why Puerto Rico? Why not just... Colombia?
Everybody does Colombia. And Colombia is great — we're not here to throw shade at an entire nation's coffee industry. But when we started Castor & Pollux in 2025, we weren't looking for "safe." We were looking for ours.
Mexico and Puerto Rico are deeply personal to us. These aren't just sourcing decisions — they're cultural commitments. We source exclusively from these two origins because the people, the land, and the cup profiles feel like home. Mexican Coffee: Altitude, Shade, and a Lot of Heart
Mexico doesn't always get the credit it deserves in the specialty coffee world, and honestly? That's a shame.
The best Mexican coffees — especially from regions like Oaxaca, Chiapas, and Veracruz — are grown at high elevation under shade canopy, which slows cherry development and concentrates flavor. What you get is a cup with natural sweetness, mild brightness, and a body that's smooth without being flat. Think dark chocolate, toasted almond, a whisper of citrus.
It's why Mexican beans anchor our roasts so well. They're approachable enough for everyday drinking but complex enough that the more you pay attention, the more you taste.

Puerto Rican Coffee: The Caribbean's Best Kept Secret
Puerto Rican coffee has a legendary past. In the late 1800s, it was considered among the finest in the world — served to the Vatican, exported to European royalty. Then a series of hurricanes, land policy changes, and shifting economics nearly wiped the industry out.
It's coming back. Slowly, stubbornly, beautifully.
Puerto Rican coffee is grown in the mountains of the Cordillera Central — places like Yauco, Lares, and Las Marías — where the cool elevation and Caribbean humidity create a cup that's round, full-bodied, and naturally sweet. It's not a punchy, acidic coffee. It's a coffee you settle into.
Blended with our Mexican beans, it adds richness and depth that makes even our lighter roasts feel substantial. That balance is exactly what you get in our Cosmic Horizon Medium Roast — the Puerto Rican influence is there in every smooth, satisfying sip.
How to Brew These Beans to Get the Most Out of Them
These origins have a lot to say. Your brew method can either let them speak or drown them out. Here's what we recommend:
For whole bean drinkers: Grind fresh, every time. Seriously — pre-ground coffee starts losing its best aromatics within minutes of grinding. A burr grinder is worth the investment. For our Dark Matter whole bean, a medium-coarse grind for pour-over or a fine grind for espresso both work beautifully.
For pour-over fans: Mexican beans love pour-over. The controlled, slow extraction brings out the chocolate and nutty notes without over-extracting the bitterness. Use water around 200°F (not a full boil), bloom the grounds for 30 seconds, then pour in slow circles.
For cold brew lovers: Both origins are excellent cold brewed. The low-and-slow extraction mellows any acidity and leans into the natural sweetness.
